Morgan Hipworth’s Coffee Popping Pearl Cheesecake Cups

These indulgent cheesecake cups feature a crunchy biscuit base, a velvety cream cheese and mascarpone mousse, and a delightful burst of flavour from L’OR Coffee Popping Pearls. Perfect for entertaining or a special treat for the family, they’re easy to prepare and irresistibly delicious.

  • Ingredients

    • 160g crushed biscuits
    • 60g Melted White Chocolate
    • 250g Cream Cheese
    • 250g Cream
    • 200g Mascarpone
    • 120g Sugar
    • A splash of vanilla
  • Instructions

    • In a blender, blitz the biscuits. Melt the white chocolate, then combine it with the biscuit blend in a bowl.
    • Spoon some of the mixture into a cup and press it down firmly to create the base.
    • For the mousse, separately whip the cream cheese with sugar and mascarpone with vanilla until smooth, then gently fold them together using a flat spatula.
    • Transfer the mousse into a piping bag and fill the cup to ¾ full. Chill in the fridge for at least 3 hours or until set.
    • Top with a spoonful of L’OR Coffee Popping Pearls just before serving.
