Chocolate Mousse with Coffee Popping Pearls

  • Ingredients

    • 200g dark chocolate (70% cocoa)
    • 3 large eggs, separated
    • 50g granulated sugar
    • 200ml double cream
    • 1-2 spoons of L'OR Coffee Popping Pearls (for garnish)
  • Instructions

    • Break the chocolate into small pieces and melt in a heatproof bowl over a pot of simmering water. Stir until smooth and then remove from heat. Let it cool slightly.
    • In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
    • In a separate bowl, whip the double cream until it forms soft peaks.
    • Stir the egg yolks into the melted chocolate until well combined. Gently fold in the whipped cream, followed by the beaten egg whites, ensuring you maintain as much air as possible for a light mousse texture.
    • Spoon the chocolate mousse into serving glasses or bowls.
    • Refrigerate for at least 2 hours, or until set.
    • Add L'OR coffee popping pearls on top for a unique burst of flavour.
